Shape and bake

  1. Place the rolls in a pan and let them rise again.

  2. When ready for the oven, beat the yolk of an egg with one tablespoon of sugar and a teaspoon of sweet milk.

  3. Brush the rolls with this glaze and bake.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread sponge
Provides a pre-fermented base that makes the dough rise and gives it a light, airy crumb.
Eggs
Add richness and structure, helping the dough hold its shape and bake tender.
Sugar
Adds sweetness and helps the crust brown during baking.
Shortening
Adds fat that tenderizes the crumb and keeps the rolls soft.

The step that matters

Let the dough rise well. The sponge needs enough time to ferment and expand the dough; under-proofed rolls stay dense and heavy after baking, while the gas trapped during rising gives a light texture.
