Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the boiling water into a set, smooth custard base.
Eggs
Add richness and help the filling set as it bakes.
Sugar
Sweetens the filling and balances the sharpness of the lemon.
Lemon
Provides the bright acidity and aroma that define the pie.

The step that matters

Stirring the cornstarch into boiling water. Cornstarch must be fully dispersed in cold water before it meets the boiling liquid, or it clumps. Once boiling, it thickens as the starch granules swell and gelatinize, so the mixture needs to keep bubbling while it is stirred.
