Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as the pudding sets.
Flour
Gives the batter body and helps it hold its shape when cooked.
Grated bread
Adds bulk and soaks up milk, giving a softer, lighter crumb.
Suet
Adds fat and richness, keeping the pudding moist as it cooks.
Milk
Moistens the batter so the dry ingredients hydrate evenly.

The step that matters

Beating the mixture well before adding the cherries. Thorough beating incorporates air and fully hydrates the flour and bread, giving an even, lightly risen texture. Adding fruit to an under-mixed batter can leave dense pockets and cause the cherries to sink as the pudding sets.
