Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard and bind the pudding so it holds together when cooked.
Stale bread
Forms the soft body of the pudding and soaks up the custard.
Milk
Provides the liquid that the eggs set into a smooth custard.
Sugar
Sweetens the pudding and balances the sharpness of the lemon.
Lemon rind
Adds bright aroma and citrus flavour throughout the pudding.

The step that matters

Cooking the lemon mixture until it thickens. Egg proteins set as they heat, so if the mixture gets too hot or is cooked too fast it can scramble and turn grainy. Cooking gently and stirring keeps it smooth and thick enough to spread.
