Why it works: Flour and butter are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Corn-starch
- Thickens the filling as it cooks with the boiling water.
- Egg yolks
- Enrich and thicken the filling, giving it a rich body.
- Lemon juice
- Adds acidity that gives the filling its tart flavor.
- Sugar
- Sweetens the filling and balances the lemon's acidity.
- Flour
- Adds additional thickening to the filling alongside the corn-starch.
The step that matters
Stirring the starch while adding boiling water. Starch granules can clump when they meet hot liquid unless stirred constantly. Continuous stirring disperses them so the filling thickens smoothly rather than becoming lumpy.
