Apple Pudding with Rice

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the pudding

  1. Core and chop the apples.

  2. In a bowl, combine the chopped apples, boiled rice, milk, and egg yolks.

  3. Beat until smooth, then add the sugar and lemon juice and rind.

Bake and top

  1. Pour the mixture into a baking dish and bake at 350°F (175°C) until set.

  2. Beat the egg whites with a little sugar until stiff peaks form.

  3. Spread the egg whites on top of the pudding and brown under the broiler.

What each ingredient does

Sour apples
Provide the main fruit flavor and moisture that keeps the pudding tender.
Boiled rice
Gives the pudding body and a soft, creamy structure as it sets.
Milk
Supplies liquid that cooks with the eggs and rice into a custard-like base.
Egg yolks
Thicken the base and help it set firm when baked.
Egg whites
Whipped into a meringue that forms a light topping and browns under the broiler.
Sugar
Sweetens the pudding and helps the meringue become glossy and stable.

The step that matters

Beating the egg whites to stiff peaks. Egg whites must be whipped until stiff peaks form so the meringue holds its shape and stays airy. Under-whipped whites will weep and spread on the pudding, while overbaking under the broiler can scorch the topping quickly.

Swap the apple

How well each one fits the dish's main ingredients (rice, milk, sugar, lemon, egg):
