What each ingredient does

Rice
Forms the molded base and provides the firm, starchy structure of the pudding.
Peaches
Supply fruit flavor and moisture for the cream-based center.
Heavy cream
Adds richness and a soft, airy texture to the peach mixture.
Sugar
Sweetens the syrup that soaks into the rice.
Lemon juice
Adds acidity that brightens the sweet peach flavor.

The step that matters

Press the rice into the mold while hot. Hot rice is soft and pliable, so it packs tightly and holds its shape when unmolded. Once it cools, the starch firms up and the rice is harder to press into the mold's details, and it can crumble.

Swap the lemon

How well each one fits the dish's main ingredients (rice, peach, cream, sugar):

Fit is the average pairing score against rice, peach, cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
