Spice Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat your oven to 350°F (175°C).

  2. In a mixing bowl, cream together the sugar and butter.

  3. Add the eggs and milk, mixing well.

  4. Stir in the baking powder, cinnamon, cloves, and nutmeg.

  5. Gradually add flour until the batter reaches a smooth consistency.

  6. Fold in ground walnuts if using.

Bake

  1. Pour the batter into a greased cake pan and bake for 25-30 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure and binding, setting the crumb as the cake bakes.
Butter
Adds fat for tenderness and a rich flavor in the crumb.
Sugar
Sweetens the cake and helps create a tender, browned crust.
Baking powder
Releases gas during baking so the cake rises and becomes light.
Flour
Forms the main structure of the cake batter as it sets in the oven.

The step that matters

Testing for doneness. Pulling the cake too early leaves the center wet and sunken, since the eggs and flour have not fully set. A toothpick inserted in the center should come out clean before removing the cake from the oven.

Swap the clove

How well each one fits the dish's main ingredients (sugar, butter, egg, milk, cinnamon, nutmeg, flour):

  1. Cardamomfits better
  2. Allspicefits about as well
  3. Clovethe original
  4. Gingerfits less well

Fit is the average pairing score against sugar, butter, egg, milk, cinnamon, nutmeg, flour. Candidates are from the same food group and used in at least 100 recipes.
