Apple Snowball

Ingredients

Directions

Cook the rice

  1. In a double boiler, cook the rice with salt, milk, and water until all the liquid is absorbed.

Assemble and steam

  1. Butter small molds or cups generously.

  2. Line the molds with ½ inch of hot rice.

  3. Place a quarter of a sour apple in the center and sprinkle with sugar, cinnamon, or lemon juice.

  4. Cover the apple with more rice and steam for 30 minutes in a steamer or in a pan of hot water on the stove.

Serve

  1. For better flavor, consider pre-cooking the apples slightly.

  2. Serve with a creamy sauce and take care to remove them from the molds without losing their shape.

What each ingredient does

Rice
Forms the starchy shell that cooks into a firm, sliceable mould around the apple.
Milk
Adds richness and creaminess to the rice as it absorbs the liquid.
Sour apple
Provides tart, moist filling that contrasts with the sweet rice.
Sugar
Adds sweetness to balance the sour apple.

The step that matters

Removing the rice balls from the molds. Freshly steamed rice is soft and sticky, so it can tear or slump when unmolded. Letting it rest briefly helps the starch set and hold its shape.

Swap the lemon
