What each ingredient does

Grape skins
Provide color and the deep, rich flavor characteristic of the spiced grapes.
Sugar
Adds sweetness and helps preserve the cooked grape mixture.
Vinegar
Adds acidity that brightens the sweet, spiced flavor.

The step that matters

Simmer until a rich color is achieved. Color develops gradually as the mixture reduces and concentrates, so stopping too early leaves it pale and dull, while overcooking can make it too thick and sticky.

Swap the clove

How well each one fits the dish's main ingredients (grape, sugar, vinegar):

  1. Cinnamonfits better
  2. Peppermintfits about as well
  3. Allspicefits about as well
  4. Clovethe original

Fit is the average pairing score against grape, sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
