Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich the soaking custard and whites whip into the meringue topping.
Milk
Moistens the bread and forms a custard-like soak that sets when fried.
Bread
Acts as the base that soaks up the egg mixture and crisps in butter.
Granulated sugar
Sweetens the lemon syrup and adds sweetness to the dish.
Powdered sugar
Sweetens the meringue and helps it hold a smooth, stable texture.

The step that matters

Browning the meringue. Meringue can weep or brown unevenly if overbaked or left too long; a brief, watched broil browns the peaks slightly while keeping the topping soft inside.
