What each ingredient does

Oysters
Form the main body of the salad and provide its savory, briny flavor.
Celery
Adds crisp texture and a fresh, mild crunch against the soft oysters.
Vinegar
Adds acidity that brightens the flavor of the oysters.
Oil
Adds fat and a smoother mouthfeel to the seasoned oysters.

The step that matters

Draining the oysters before seasoning and again before adding celery. Excess liquid dilutes the vinegar and oil seasoning and makes the salad watery. Draining well keeps the dressing concentrated and the texture firm.

Swap the lettuce

How well each one fits the dish's main ingredients (oyster, celery, vinegar, pepper):

  1. Mustardfits better
  2. Capsicumfits better
  3. Cucumberfits better
  4. Lettucethe original

Fit is the average pairing score against oyster, celery, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
