Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Suet
Adds fat that keeps the pudding moist and rich as it cooks.
Flour
Provides the structure that holds the pudding together.
Molasses
Adds sweetness, dark color, and moisture.
Baking soda
Reacts with the molasses acidity to help the pudding rise and lighten.
Raisins
Add chewy texture and concentrated sweetness.

The step that matters

Boiling the pudding. The mold must stay sealed and the water must keep simmering for the full three hours. If the water boils down or the cloth leaks, the pudding dries out and cooks unevenly.
