Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Indian meal
Its starch swells in the hot milk and thickens the pudding so it sets.
Milk
Provides the liquid base that cooks with the meal into a creamy custard.
Molasses
Adds sweetness, deep color, and a rich caramel-like flavor.
Butter
Adds fat for richness and a smoother, softer texture.

The step that matters

Mix well when adding the boiling milk. Cornmeal starch clumps if it hits hot liquid unevenly. Stirring thoroughly while the milk is boiling disperses the meal so its starch hydrates and thickens the pudding smoothly.

Swap the ginger

How well each one fits the dish's main ingredients (butter, molasses, milk):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Clovefits about as well
  4. Gingerthe original
