Spice Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat oven to 350°F (175°C).

Make the batter

  1. In a bowl, cream together the brown sugar and butter.

  2. Add the egg and mix well.

  3. Stir in the sour milk and baking soda.

  4. In another bowl, combine the flour, cinnamon, cloves, and salt.

  5. Gradually add the dry ingredients to the wet mixture.

  6. Fold in the raisins.

Bake

  1. Pour the batter into a greased cake pan and bake for 30-35 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Adds sweetness and moisture, and contributes to a soft, tender crumb.
Egg
Binds the batter and adds structure as it sets during baking.
Butter
Adds fat for richness and a tender texture.
Sour milk
Provides liquid and acidity that reacts with baking soda to help the cake rise.
Baking soda
Reacts with the acidic sour milk to produce gas that leavens the cake.
Flour
Forms the main structure of the cake as its proteins set during baking.

The step that matters

Gradually add the dry ingredients to the wet mixture. Adding flour in portions and mixing gently keeps gluten development limited, so the cake stays tender rather than tough, while the batter still combines evenly.

Swap the clove

How well each one fits the dish's main ingredients (sugar, egg, butter, milk, cinnamon, flour, raisin):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Clovethe original
  4. Allspicefits about as well

Fit is the average pairing score against sugar, egg, butter, milk, cinnamon, flour, raisin. Candidates are from the same food group and used in at least 100 recipes.
