Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the sherbet and dissolves into syrup that sets the texture when frozen.
Lemons
Provide the acidity and aroma; their oil is drawn out by rolling in sugar.
Egg white
Beaten to foam, it lightens the mixture and adds body to the frozen texture.

The step that matters

Gradually pour the strained syrup into the beaten egg white. Adding hot syrup too quickly can cook or deflate the foamed egg white, so a thin, steady stream keeps the mixture light and smooth.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
