Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. Beat the egg yolks and sugar together for 10 minutes.

  3. Fold in the beaten egg whites, then add the grated almonds and rye bread crumbs.

  4. Divide the mixture into two layers.

Bake and make the filling

  1. Bake until golden.

  2. Cream the unsalted butter with confectioner's sugar. Add the egg yolks and beat until smooth. Mix in cocoa or strong coffee if desired.

What each ingredient does

Eggs
Egg whites give the batter lift and airy structure, while yolks add richness and set the layers.
Grated almonds
Provide body and a moist, tender crumb in the layers.
Rye bread crumbs
Add bulk and a subtle, earthy flavor while helping hold the batter together.
Unsalted butter
Adds fat for a rich, smooth filling and a tender texture.
Sugar
Sweetens the batter and helps the yolks whip to a light, stable foam.

The step that matters

Fold in the beaten egg whites. Egg whites hold air that gives the torte its lift. Overmixing or deflating them makes the layers dense, so fold gently and keep as much air as possible.

Swap the cocoa

The recipe marks cocoa as optional. How well each one fits the dish's main ingredients (egg, sugar, almond, rye, bread, butter):

  1. Chestnutfits better
  2. Flaxseedfits better
  3. Brazil nutfits better
