Apples and Rice

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Wash the rice, adjusting the quantity based on the dish size.

  2. Pour a little cold water over the rice and set it on the stove until the water is absorbed.

  3. Add a little milk and mix with a spoon.

  4. Place the dish back on the stove, stirring occasionally until the rice is soft.

  5. Mix in a little cream.

  6. Pare and quarter the baking apples, then place them in a dish with sugar and the grated lemon rind.

  7. Top with the rice and bake in a moderate oven at 350°F (175°C) until the rice is light brown.
