What each ingredient does

Egg
Yolk thickens and enriches the lemon filling as it sets with heat.
Corn starch
Thickens the filling into a sliceable custard when heated in boiling water.
Lemon
Provides the sharp acidity that balances the sweetness of the filling.
Sugar
Sweetens the filling and counters the lemon's tartness.
Egg white
Whipped into a foam that forms the meringue topping, which browns in the oven.

The step that matters

Pour the mixture into a pie crust and bake until set.. Starch thickens only once it gets hot enough, and the egg must be cooked to set the filling. Underbaking leaves a runny filling that will not hold its shape when sliced.
