Queen of Puddings

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the pudding

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, combine the bread crumbs, milk, sugar, egg yolks, lemon rind, and butter. Mix well and pour into a baking dish.

  3. Bake until set but not watery.

  4. Spread a layer of jelly on top.

Top and serve

  1. In another bowl, whip the egg whites to stiff peaks. Gradually beat in the teacup of sugar and lemon juice.

  2. Spread the meringue over the pudding. Brown in the oven.

  3. Serve warm or cold.

What each ingredient does

Bread crumbs
Form the body of the pudding and soak up the milk and custard.
Egg yolks
Set the custard so the pudding holds its shape when baked.
Milk
Provides the liquid that softens the crumbs and forms the custard.
Egg whites
Whipped to stiff peaks to form the meringue topping.
Sugar
Sweetens the pudding and helps the meringue become stable and glossy.

The step that matters

Bake until set but not watery. Underbaking leaves the custard loose and wet, while overbaking can make it grainy and cause weeping. Egg proteins set with heat, so the pudding should be firm at the centre before the meringue goes on.
