Why it works: Flour and raisin match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Fruit Cake

Ingredients

Directions

The book says “a very slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter and sugar together.

  2. Add the molasses and beaten eggs to the mixture.

  3. Gradually mix in the slightly browned flour and baking soda.

  4. Dissolve the spices in the whisky and add to the batter.

  5. Dredge the fruit with flour and fold it into the batter last.

Bake

  1. Bake in a slow oven at 300°F (150°C) for three and a half hours.

What each ingredient does

Butter
Creams with sugar to trap air and give the cake a tender, rich crumb.
Eggs
Bind the batter and add structure as they set during baking.
Flour
Forms the cake's main structure once its starches set in the oven.
Baking soda
Reacts with the molasses and browned flour to lift the batter and deepen color.
Molasses
Adds moisture, dark color and a deep, slightly acidic sweetness.
Raisins
Add chewy moisture and concentrated sweetness throughout the cake.

The step that matters

Folding the dredged fruit in last. Flour-coated fruit is less likely to sink to the bottom of the batter. Folding gently keeps the batter's trapped air intact so the cake rises evenly.

Swap the currant

How well each one fits the dish's main ingredients (flour, raisin, sugar, almond, whisky, molasses, allspice):

  1. Figfits better
  2. Vanillafits better
  3. Orangefits better
  4. Currantthe original

Fit is the average pairing score against flour, raisin, sugar, almond, whisky, molasses, allspice. Candidates are from the same food group and used in at least 100 recipes.
