Spice Cake

Why it works: Cinnamon and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Spice Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream together the butter and brown sugar until light and fluffy.

  3. Add the eggs and egg white, mixing well.

  4. Stir in the sour milk.

  5. In another bowl, combine the cake flour, baking soda, allspice, cinnamon, clove, and grated nutmeg.

  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Bake

  1. Pour the batter into a greased cake pan.

  2. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake a light, tender crumb and rich flavor.
Brown sugar
Adds sweetness and moisture, and its molasses supports a soft, deeply flavored crumb.
Eggs
Add structure and richness, helping the batter set and hold its shape while baking.
Cake flour
Provides the structure of the cake; its low protein gives a fine, tender crumb.
Sour milk
Its acidity reacts with the baking soda to help the cake rise and keeps it moist.
Baking soda
Reacts with the acid in the sour milk to produce carbon dioxide, lifting the batter as it bakes.

The step that matters

Gradually add the dry ingredients to the wet mixture, stirring until just combined.. Once flour meets liquid, gluten begins to form. Stirring only until combined keeps the crumb tender, while overmixing makes the cake tough and dense.

Swap the clove

How well each one fits the dish's main ingredients (egg, sugar, milk, butter, flour, allspice, cinnamon):

  1. Nutmegfits better
  2. Cardamomfits about as well
  3. Clovethe original
  4. Gingerfits less well

Fit is the average pairing score against egg, sugar, milk, butter, flour, allspice, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
