Frozen Pudding

Ingredients

Directions

Make the custard base

  1. Combine milk, cinnamon, mace, and raisins in a saucepan.

  2. Cover and simmer slowly for 15 minutes.

  3. Beat egg yolks until light, then gradually add powdered sugar until creamy.

  4. Strain the milk to remove spices and raisins, saving the raisins for later.

  5. Add the egg and sugar mixture to the boiling milk.

  6. Stir until it simmers once.

  7. Remove from heat and let cool.

Finish and freeze

  1. Stir in the pounded almonds with rose water, the reserved raisins, citron, and optional ginger, and mix well.

  2. Add the cream and stir until combined.

  3. Freeze like ice cream.

What each ingredient does

Egg yolks
Thicken the custard and add richness as they set gently with the warm milk.
Whole milk
Forms the liquid base that carries the spice and sugar flavours.
Rich cream
Adds fat for a smooth, creamy texture that resists icy crystals.
Powdered sugar
Sweetens the custard and dissolves easily into the egg yolks.
Raisins
Add chewy sweetness and body to the finished frozen dessert.

The step that matters

Stirring the egg mixture into the milk. Egg yolks can scramble if the hot milk is added too fast or the custard is overheated. Bringing it to a gentle simmer only once, while stirring, thickens it smoothly without curdling.

Swap the mace

How well each one fits the dish's main ingredients (milk, cinnamon, raisin, egg, sugar, almond, rose):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against milk, cinnamon, raisin, egg, sugar, almond, rose. Candidates are from the same food group and used in at least 100 recipes.
