Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Softens as it cooks in milk, forming the thick, starchy body of the pudding.
Milk
Cooks with the rice to make a creamy base that carries the sweetness and flavour.
Eggs
Yolks enrich the custard, while whites whip into a foam that sets and forms the topping.
Sugar
Sweetens the dish and helps stabilise the whipped egg whites.

The step that matters

Bake until golden brown. Egg white foam sets and browns quickly in the oven, so watching the topping closely prevents it from over-browning, drying out or turning tough.

Swap the lemon

How well each one fits the dish's main ingredients (rice, sugar, egg, milk):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits about as well
  4. Lemonthe original

Fit is the average pairing score against rice, sugar, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
