Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream together the butter and sugar.

  3. Add the egg and milk, mixing well.

  4. In another bowl, combine the flour, baking powder, and spices.

  5. Gradually add the dry ingredients to the wet mixture.

  6. Fold in the raisins, nuts, and citron.

  7. Pour the batter into a greased cake pan.

Bake

  1. Bake for about 30-40 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the cake's structure once its starches set during baking.
Egg
Binds the batter and adds structure and richness as it sets.
Butter
Adds fat for tenderness and flavor in the creamed base.
Sugar
Sweetens the cake and helps create a tender crumb when creamed with butter.
Baking powder
Releases gas in the batter to make the cake rise.
Raisins
Add chewy texture and concentrated sweetness throughout the cake.

The step that matters

Gradually add the dry ingredients to the wet mixture. Adding flour in portions and mixing only until combined limits gluten development, keeping the cake tender rather than tough and dense.

Swap the clove

How well each one fits the dish's main ingredients (egg, sugar, butter, milk, flour, cinnamon, allspice):

  1. Nutmegfits better
  2. Cardamomfits about as well
  3. Clovethe original
  4. Gingerfits less well

Fit is the average pairing score against egg, sugar, butter, milk, flour, cinnamon, allspice. Candidates are from the same food group and used in at least 100 recipes.
