Raisin Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine chopped raisins, sugar, eggs, vinegar, syrup, water, flour, cloves, cinnamon, and baking soda. Mix until well combined.

  3. Grease a pie dish with butter and line it with one pie crust.

Assemble and bake

  1. Pour the filling into the crust and cover with the second crust.

  2. Seal the edges and cut slits in the top crust for steam to escape.

  3. Bake for 30-40 minutes or until the crust is golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the filling and help it set as it bakes.
Flour
Thickens the filling so it holds its shape when cut.
Baking soda
Reacts with the acidic vinegar and syrup, lightening the filling's texture.
Sugar
Sweetens the filling and helps it caramelize and brown slightly.
Raisins
Provide the main body, chewy texture and sweetness of the filling.

The step that matters

Sealing the edges and cutting steam slits. Sealing the edges keeps the filling from leaking, and slits let steam escape so the crust does not swell or burst while baking.

Swap the clove

How well each one fits the dish's main ingredients (raisin, sugar, egg, vinegar, syrup, flour, cinnamon):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Allspicefits about as well
  4. Clovethe original

Fit is the average pairing score against raisin, sugar, egg, vinegar, syrup, flour, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
