Lemon Meringue Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the pudding base

  1. Soak the bread crumbs in the milk.

  2. In a bowl, mix the beaten egg yolks with the sugar and butter until creamy.

  3. Add the lemon juice and grated rind to the mixture.

Bake and top

  1. Pour the mixture into a buttered dish and bake at 350°F (175°C) until firm and slightly browned.

  2. Remove from the oven and cover with meringue made from whipped egg whites and powdered sugar.

  3. Brown the meringue slightly, sift powdered sugar over it, and serve cold.

What each ingredient does

Bread crumbs
Soaked in milk, they thicken the custard and give the pudding body.
Eggs
Yolks set the custard when baked, while whipped whites form the meringue topping.
Butter
Adds richness and a smooth, creamy texture to the custard base.
Milk
Soaked with the bread crumbs, it forms the liquid base that bakes into the custard.
Lemon
Juice and rind add acidity and bright aroma that cut the sweetness.
White sugar
Sweetens the custard and helps keep the yolks smooth when mixed.

The step that matters

Baking until firm. Egg yolks set as they heat, so baking until firm without overcooking keeps the custard tender rather than grainy or watery under the meringue.
