Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream together the sugar and butter until light and fluffy.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Gradually stir in the flour, followed by the raisins and citron.

  5. Add the grated nutmeg, cinnamon, mace, and cloves, mixing until combined.

  6. Pour in the brandy and claret, and mix well.

Bake

  1. Pour the batter into a greased cake pan and bake for about 1.5 to 2 hours, or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as they set during baking.
Butter
Adds richness and tenderness through fat creamed with the sugar.
Flour
Provides the structure that holds the cake together as it bakes.
Sugar
Sweetens the cake and helps create a light, creamed texture.
Raisins
Add chewy sweetness and moisture throughout the cake.

The step that matters

Creaming the sugar and butter. Beating sugar and butter until light and fluffy traps air in the fat, which helps the cake rise and gives it a lighter crumb. Under-creaming leaves a denser cake.

Swap the mace

How well each one fits the dish's main ingredients (sugar, butter, flour, egg, raisin, nutmeg, cinnamon):

  1. Cardamomfits better
  2. Allspicefits better
  3. Clovefits better
  4. Macethe original

Fit is the average pairing score against sugar, butter, flour, egg, raisin, nutmeg, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
