Why it works: Flour and raisin match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Federal Cake
Ingredients
Directions
The book says “a very moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare the batter
Preheat the oven to 350°F (175°C).
In a large bowl, cream together the butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Mix in the sour cream, brandy, grated nutmeg, and cloves.
In a separate bowl, sift together the flour and baking soda.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Fold in the raisins.
Bake and cool
Pour the batter into an ungreased pan with 2-inch deep projections on the edges.
Bake for 40 minutes, or until a toothpick inserted in the center comes out clean.
Do not open the oven for the first 15 minutes.
Once baked, turn the pan upside down to cool, then loosen the sides with a knife to remove the cake.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Butter
- Creamed with sugar to trap air, giving the cake a light, tender crumb and rich flavor.
- Eggs
- Add structure and richness, binding the batter as they set in the oven.
- Flour
- Forms the main structure of the cake as its proteins set during baking.
- Baking soda
- Reacts with the acidic sour cream to produce gas that helps the cake rise.
- Sour cream
- Adds moisture and tang, and its acidity activates the baking soda.
- Raisins
- Add chewy texture and sweetness dispersed through the cake.
The step that matters
Do not open the oven for the first 15 minutes. Opening the oven early drops the temperature and can cause the batter's rising structure to collapse before it sets, leaving a dense or sunken cake.
Swap the nutmeg
How well each one fits the dish's main ingredients (butter, sugar, flour, cream, egg, brandy, raisin):
- Nutmegthe original
- Cinnamonfits about as well
- Capersfits less well
- Allspicefits less well
Fit is the average pairing score against butter, sugar, flour, cream, egg, brandy, raisin. Candidates are from the same food group and used in at least 100 recipes.
