Ingredients

Directions

  1. In a large pot, combine water, ham bone, beef or mutton bones, celery, onions, and split peas.

  2. Bring to a boil and cook until the peas are soft.

  3. Remove the bones and strain the peas and vegetables through a sieve.

  4. Return the strained mixture to the pot, add salt and pepper to taste, and boil for one hour, skimming as needed.

  5. For added flavor, stir in spinach or green peas after removing the bones.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Split peas
Break down while simmering to thicken the soup and give it body.
Ham bone
Releases savory flavor into the water during long simmering.
Celery
Adds aromatic flavor that builds the soup's base.
Onions
Add sweetness and aromatic depth as they soften in the broth.

The step that matters

Skimming during the final boil. Foam and fat rise to the surface during the hour-long boil. Skimming them off keeps the soup clean-tasting and less greasy.

Swap the peas

The recipe marks peas as optional. How well each one fits the dish's main ingredients (ham, celery, onion, pepper, spinach):

  1. Black-eyed peafits better
  2. Lentilsfits better
  3. Beansfits better
  4. Peasthe original
