Spice Cake

Why it works: Flour and raisin match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, cream together the brown sugar and butter.

  3. Add the sour milk and eggs, mixing well.

  4. In another bowl, combine the flour, baking soda, cloves, allspice, cinnamon, and nutmeg.

  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  6. Fold in the raisins, chopped almonds, currants, and citron if using.

Bake

  1. Pour the batter into a greased cake pan and bake for 30-40 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as the cake sets in the oven.
Flour
Forms the main structure that holds the cake together as it bakes.
Baking soda
Reacts with the acidic sour milk to produce gas that helps the cake rise.
Brown sugar
Adds sweetness, moisture, and a deeper caramel flavor to the cake.
Butter
Adds richness and tenderness, and helps trap air when creamed with sugar.
Sour milk
Adds moisture and acidity that activates the baking soda for lift.

The step that matters

Stirring the dry ingredients into the wet mixture. Overmixing once flour meets liquid develops gluten, which makes the cake tough and dense. Stir only until the flour is just combined, leaving small lumps.

Swap the currant

How well each one fits the dish's main ingredients (sugar, milk, butter, flour, raisin, almond, egg):

  1. Vanillafits better
  2. Figfits better
  3. Coconutfits better
  4. Currantthe original

Fit is the average pairing score against sugar, milk, butter, flour, raisin, almond, egg. Candidates are from the same food group and used in at least 100 recipes.
