What each ingredient does

Eggs
Whites trapped by folding add lift and an airy, light crumb to the torte.
Stale rye bread crumbs
Provide body and a dense, moist crumb that gives the torte its character.
Grated almonds
Add richness, moistness and a tender texture without much flour.
Baking powder
Releases gas in the batter, helping the torte rise in the oven.
Sugar
Sweetens the batter and helps tenderise it and brown the crust.

The step that matters

Fold in the beaten egg whites gently. Egg whites hold air that gives lift. Stirring them vigorously knocks out this air and produces a dense, heavy torte.
