Cheap Lemon Custard

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the cornstarch and sugar.

  3. Add the milk and butter, and stir until smooth.

  4. Juice the lemons and add the juice to the mixture.

Make the meringue and bake

  1. Separate the egg whites and beat them until stiff to make meringue.

  2. Fold the meringue into the lemon mixture.

  3. Pour the mixture into a pie crust and bake for about 25-30 minutes.

What each ingredient does

Eggs
Egg whites whipped into meringue add lightness and help the filling set when baked.
Cornstarch
Thickens the filling so it sets into a sliceable custard rather than staying runny.
Sugar
Sweetens the filling and helps stabilise the whipped egg whites.
Lemons
Juice adds the sharp acidity that defines the flavour of the custard.
Butter
Adds fat for richness and a smoother, silkier texture.

The step that matters

Fold the meringue into the lemon mixture. Folding gently keeps the whipped egg whites airy; stirring or overmixing deflates them, so the custard bakes up less light and may weep or turn dense.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar, milk, butter):
