Why it works: Cinnamon and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Raisin Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream together the sugar and butter.

Make the batter

  1. Add the sweet milk, baking powder, and cinnamon and cloves, then mix well.

  2. Fold in the flour and raisins until combined.

  3. Add brandy and mace to taste.

  4. Pour the batter into a greased cake pan.

Bake

  1. Bake for about 45-50 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the cake's structure as its proteins set during baking.
Butter
Adds fat that tenderizes the crumb and carries flavor.
Sugar
Sweetens the cake and helps create a tender, browned crumb.
Baking powder
Releases gas in the batter, causing the cake to rise.
Sweet milk
Adds moisture and hydrates the flour to form the batter.
Raisins
Add pockets of concentrated sweetness and chewy texture throughout the cake.

The step that matters

Fold in the flour and raisins until combined.. Overmixing once flour is added develops gluten, which makes the cake dense and tough. Stop as soon as no dry flour streaks remain.

Swap the clove

How well each one fits the dish's main ingredients (sugar, butter, flour, milk, raisin, cinnamon, brandy):

  1. Nutmegfits better
  2. Cardamomfits about as well
  3. Clovethe original
  4. Allspicefits about as well

Fit is the average pairing score against sugar, butter, flour, milk, raisin, cinnamon, brandy. Candidates are from the same food group and used in at least 100 recipes.
