Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the batter

  1. In a large bowl, combine bread crumbs, chopped suet, molasses, baking soda, ground cloves, flour, raisins, sweet milk, salt, and ground cinnamon. Mix well until all ingredients are thoroughly combined.

Steam and serve

  1. Pour the mixture into a greased pudding mold.

  2. Steam for about 2 to 3 hours until firm.

  3. Let cool before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Suet
Adds fat that keeps the pudding moist and rich as it steams.
Bread crumbs
Absorb liquid and give the pudding a tender, body-filled crumb.
Flour
Provides the structure that holds the pudding together once steamed.
Baking soda
Reacts with the acidic molasses to produce gas that lightens the texture.
Molasses
Adds sweetness, dark color and moisture, and its acidity activates the baking soda.

The step that matters

Steam until firm. Steaming gently sets the batter into a moist, cohesive pudding. Stopping too early leaves it wet and crumbly, while the gentle heat of steam avoids drying the crumb.

Swap the clove

How well each one fits the dish's main ingredients (bread, molasses, flour, raisin, milk, cinnamon):

  1. Nutmegfits better
  2. Clovethe original
  3. Cardamomfits about as well
  4. Allspicefits about as well

Fit is the average pairing score against bread, molasses, flour, raisin, milk, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
