Ingredients

Directions

The book says “a good oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Layer bread crumbs in the bottom of a dish.

  3. Cut apples into very thin slices and layer them over the bread crumbs.

  4. Continue layering with bread crumbs and apples until the dish is full, finishing with a layer of bread crumbs on top.

Bake

  1. Dissolve sugar in boiling water and add lemon extract; pour over the layers.

  2. Dot the top with small pieces of butter.

  3. Bake for about 1 hour.

Apples
Provide the fruit layers that soften and turn tender as they bake.
Sugar
Sweetens the sugar and boiling water mixture poured over the layers.
Butter
Adds richness and helps the top brown as it melts over the surface.
