Cheese Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the base

  1. Boil enough milk to moisten the bread crumbs well.

  2. Pour the hot milk over the bread crumbs and add the butter.

  3. Cover and let the mixture soak.

  4. Add the cheese, pepper, coarse sea salt, and the yolks of the eggs.

Bake

  1. Whip the egg whites to stiff peaks and fold them into the mixture just before baking.

  2. Transfer the mixture to a baking dish and bake in a 350°F (175°C) oven until set.

What each ingredient does

Eggs
Yolks enrich the custard and whites, whipped to stiff peaks, lighten the pudding and help it set.
Bread crumbs
Soak up the hot milk and form the soft body of the pudding.
Cheese
Adds rich flavor and fat, and helps give the pudding its savory character.
Butter
Adds fat for richness and a tender, moist texture.
Milk
Moistens the bread crumbs and forms the custard that sets in the oven.

The step that matters

Fold the whipped egg whites in just before baking. Stiff whites hold air that gives the pudding its lift. Folding gently preserves that air, and waiting until just before baking keeps it from deflating before the heat sets the mixture.
