Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Beat the egg yolks in a bowl.

  2. Add the lemon juice and grated rind to the yolks.

  3. Pour the mixture over the biscuits or cake crumbs and mix well.

  4. Line a plate with short crust pastry.

Bake

  1. Pour the mixture onto the lined plate and bake at 400°F (200°C) until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Set the custard and add richness and structure as they cook.
Savoy biscuits or cake crumbs
Provide the body that the custard mixture is built on and soaks up the liquid.
Lemon juice
Adds acidity and bright flavour that cuts through the richness of the yolks.
Lemon rind
Adds aromatic lemon oils for fragrance and flavour.

The step that matters

Bake until set. Egg yolks thicken as their proteins coagulate with heat, but overbaking can make them curdle or turn grainy and watery. Pull the pudding once it has just set in the centre.

Swap the lemon

How well each one fits the dish's main ingredients (egg, biscuit):

  1. Pumpkinfits about as well
  2. Vanillafits about as well
  3. Raisinfits about as well

Fit is the average pairing score against egg, biscuit. Candidates are from the same food group and used in at least 100 recipes.
