What each ingredient does

Rice
Starch that softens and thickens the milk into a creamy pudding as it bakes.
Milk
Liquid that cooks with the rice, providing the body and creamy texture of the pudding.
Sugar
Adds sweetness and contributes to the pudding's flavor and browning at the surface.
Raisins
Add chewy pockets of sweetness and concentrated fruit flavor throughout the pudding.

The step that matters

Adding the hot milk gradually. Rice absorbs liquid and starch thickens as it cooks; adding hot milk in stages keeps the mixture cooking evenly and lets the rice soften fully without scorching or drying out. Stopping too early leaves the texture firm.

Swap the nutmeg

The recipe marks nutmeg as optional. How well each one fits the dish's main ingredients (rice, milk, sugar, raisin, lemon):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Turmericfits less well

Fit is the average pairing score against rice, milk, sugar, raisin, lemon. Candidates are from the same food group and used in at least 100 recipes.
