Why it works: Vanilla and milk are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 19,187 recipes. Both carry ethyl caproate, which smells fruity, apple peel. The science ↓
Bread Custard
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the custard
Preheat the oven to 350°F (175°C).
In a bowl, mix the bread crumbs, milk, butter, vanilla extract, and egg yolks. Sweeten to taste.
Pour the mixture into a buttered pudding dish and bake until light brown.
Add the meringue and finish
In another bowl, beat the egg whites until stiff. Gradually add powdered sugar, one tablespoon for each egg white.
Spread the beaten egg whites over the top of the baked custard and return to the oven until light brown.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg yolks
- Enrich the custard and help it set into a soft, creamy texture.
- Bread crumbs
- Soak up the milk and give the custard body and structure.
- Egg whites
- Whipped into a stiff foam that forms the light topping which browns in the oven.
- Milk
- Provides the liquid that sets with the eggs and bread to form the custard.
The step that matters
Baking the custard until just set. Egg proteins set with heat and turn grainy or watery if overbaked, so the custard should firm at the edges while the centre still wobbles slightly.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
