Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread
Soaks up the milk and gives the pudding its body and crumb.
Eggs
Set during cooking to bind the pudding into a firm, sliceable mass.
Suet
Adds fat that keeps the pudding moist and rich as it cooks.
Molasses
Adds sweetness, dark color, and a deep caramel flavor.
Brown sugar
Adds sweetness and moisture, and helps the crust brown.

The step that matters

Beating the eggs until frothy. Air whipped into the eggs helps the pudding rise and lighten, while the proteins later set the custard-like structure. Underbeaten eggs can leave the texture dense.

Swap the allspice

How well each one fits the dish's main ingredients (bread, milk, egg, sugar, molasses, cinnamon, clove):

  1. Nutmegfits better
  2. Allspicethe original
  3. Gingerfits about as well
  4. Cardamomfits less well

Fit is the average pairing score against bread, milk, egg, sugar, molasses, cinnamon, clove. Candidates are from the same food group and used in at least 100 recipes.
