What each ingredient does

Green gooseberries
Provide the tart fruit pulp that gives the fool its characteristic flavour and body.
Egg yolks
Thicken the cream mixture into a smooth custard as they set with gentle heat.
Cream or new milk
Forms the rich base that carries the pulp and gives a silky texture.
Loaf sugar
Sweetens the fruit and balances the gooseberries' natural tartness.
Flour
Stabilises the egg mixture so it is less likely to curdle when heated.

The step that matters

Strain hot milk into egg mixture, whisking continuously. Adding hot liquid to egg yolks too quickly or without constant whisking can scramble the eggs. Gradual tempering and continuous stirring keep the proteins evenly dispersed so the custard thickens smoothly.

Swap the coriander

How well each one fits the dish's main ingredients (sugar, cream, cinnamon, lemon, clove, egg, flour):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Corianderthe original

Fit is the average pairing score against sugar, cream, cinnamon, lemon, clove, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
