Ingredients

Directions

  1. Soak the blue peas overnight.

  2. Peel, clean, and cut the vegetables and onions into small square pieces.

  3. Scald the barley by pouring boiling water over it, let it stand for a few minutes, then discard the water.

  4. Clean and cut the lettuce or cabbage into small pieces.

  5. In a boiler, combine stock, peas, barley, vegetables, onions, parsley, cabbage, and herbs.

  6. Bring to a simmer and cook until the peas and barley are tender.

  7. Make the thickening by mixing flour, pepper, and salt with a little cold water.

  8. Bring the soup to a boil, add the thickening, and stir until it boils again.

  9. Add the celery seed and simmer for about 30 minutes.

  10. Remove from heat and let it sit until ready to serve.
