Rice Pudding, Baked

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Infuse the lemon rind in the milk until well flavored.

  2. Boil the rice in water with a small amount of salt until tender, then drain thoroughly.

  3. Beat the eggs and mix in the strained milk, butter, marrow, currants, sugar, nutmeg, and rice.

  4. Line a baking dish with puff pastry, pour in the mixture, and bake at 300°F (150°C) for about 1 hour.
