Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. In a large bowl, mix molasses, lard, eggs, and ginger until as stiff as you can stir with a spoon.

  2. Dissolve the baking soda in the boiling water, then pour it over the dough.

  3. Stir briskly for a few minutes.

Bake

  1. Pour the mixture into well-greased pans.

  2. Bake in a hot oven at 400°F (200°C) until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Molasses
Provides sweetness, dark colour and moisture, and gives the gingerbread its characteristic flavour.
Lard
Adds fat for a tender crumb and moist texture.
Eggs
Bind the batter and add structure as the cake sets.
Baking soda
Reacts with the acidic molasses to produce gas, so the batter rises and lightens.

The step that matters

Stirring in the baking soda solution. Baking soda reacts with molasses as soon as it is mixed in, releasing gas. Adding it to the boiling water and stirring briskly right after distributes the gas evenly, so the cake rises well and stays light rather than dense.

Swap the ginger

How well each one fits the dish's main ingredients (molasses, egg):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Allspicefits about as well
  4. Gingerthe original

Fit is the average pairing score against molasses, egg. Candidates are from the same food group and used in at least 100 recipes.
