Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the mixture and dissolves into the water to form a syrup base.
Lemon juice
Provides the acidity and bright flavour that defines the ice.
Egg white
Beaten in at the end to lighten the texture and give a smoother, less icy crumb.

The step that matters

Folding in the beaten egg white. Egg white traps air when beaten, and folding it in gently keeps that air in the mixture. Stirring vigorously would deflate it, leaving a denser, icier result after freezing.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
