Why it works: Clove and cinnamon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Jam Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream together the sugar and butter until light and fluffy.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Stir in the milk, baking soda, baking powder, flour, and spices until just combined.

  5. Fold in the jam just before baking.

Bake

  1. Pour the batter into a greased cake pan and bake for 30-35 minutes or until a toothpick comes out clean.

What each ingredient does

Butter
Adds fat and richness, and creaming it with sugar traps air for a light crumb.
Eggs
Provide structure and help bind the batter as the cake sets.
Flour
Forms the structure of the cake as its proteins set during baking.
Baking soda
Reacts with the acidity in the batter to produce gas that helps the cake rise.
Jam
Adds sweetness, moisture and fruit flavour to the cake.

The step that matters

Fold in the jam just before baking. Jam is heavy and sugary; folding it in gently and baking right away keeps the batter's rise from being deflated and stops the jam from sinking or over-mixing the batter into a dense, gummy texture.

Swap the clove

How well each one fits the dish's main ingredients (sugar, butter, egg, milk, flour, allspice, cinnamon):

  1. Nutmegfits better
  2. Cardamomfits about as well
  3. Clovethe original
  4. Gingerfits less well

Fit is the average pairing score against sugar, butter, egg, milk, flour, allspice, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
