Eggless Cake with Sour Milk

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream the butter and sugar together.

  3. Add the sour milk and mix well.

  4. In another bowl, combine the flour, cinnamon, nutmeg, cloves, and baking soda dissolved in hot water.

  5. Gradually add the dry ingredients to the wet mixture, stirring until combined.

  6. Fold in the chopped raisins.

Bake

  1. Pour the batter into a greased cake pan.

  2. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sour milk
Its acidity reacts with baking soda to lift the cake and tenderizes the crumb.
Baking soda
Reacts with the acidic sour milk to produce carbon dioxide, making the cake rise.
Butter
Adds fat that creates a tender texture and rich flavor.
Flour
Provides the structure that holds the cake together as it bakes.
Sugar
Sweetens the cake and helps create a tender, browned crust.

The step that matters

Dissolving the baking soda in hot water before adding it to the flour. Baking soda must be evenly dispersed to react with the sour milk's acid; clumps leave bitter spots and uneven rising, so the soda should be fully dissolved and mixed through the dry ingredients.

Swap the clove

How well each one fits the dish's main ingredients (sugar, milk, raisin, butter, flour, cinnamon, nutmeg):

  1. Cardamomfits better
  2. Clovethe original
  3. Allspicefits about as well
  4. Gingerfits less well

Fit is the average pairing score against sugar, milk, raisin, butter, flour, cinnamon, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
