The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 300°F (150°C).

  2. In a bowl, mix the sugar with the yolks of the eggs until smooth.

  3. In another bowl, beat the flour and butter together, then add the egg-sugar mixture.

  4. Incorporate the spices and the beaten egg whites until frothy.

  5. Gradually stir in the fruit.

Bake

  1. Pour the batter into a prepared cake pan and bake for three hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the cake as it sets in the oven.
Butter
Adds fat for a tender crumb and rich flavor.
Sugar
Sweetens the batter and helps brown the crust.
Eggs
Bind the batter and, when beaten, add lift and structure.
Currants
Provide chewy texture and concentrated sweetness throughout the cake.
Raisins
Add chewy texture and concentrated sweetness throughout the cake.

The step that matters

Folding in the beaten egg whites. Beaten egg whites trap air that gives lift. Stirring them too hard after adding the fruit knocks out that air and leaves a dense cake.

Swap the currant

How well each one fits the dish's main ingredients (flour, butter, sugar, raisin, egg, cinnamon, clove):

  1. Vanillafits better
  2. Figfits better
  3. Quincefits better
  4. Currantthe original

Fit is the average pairing score against flour, butter, sugar, raisin, egg, cinnamon, clove. Candidates are from the same food group and used in at least 100 recipes.
