Rum Torte

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the egg yolks with the sugar until light.

  2. Add the grated almonds, bread crumbs, lemon juice, and lemon rind.

  3. Fold in the beaten egg whites, flour, and baking powder.

Bake and assemble

  1. Bake in a springform pan for 1 hour at 350°F (175°C).

  2. Allow the cake to cool slightly, then cut it crosswise into two layers.

  3. Fill with raspberry jelly and chopped walnuts.

Frost and decorate

  1. Frost with a mixture of confectioner's sugar, rum, and cream until smooth.

  2. Spread the frosting over the top and sides of the cake.

  3. For decoration, use half walnuts and slices of figs.

What each ingredient does

Eggs
Whipped whites give the cake its light, airy structure, while yolks add richness.
Almonds
Ground almonds provide a moist, tender crumb with a nutty flavor.
Sugar
Sweetens the batter and, beaten with yolks, helps trap air for lightness.
Bread crumbs
Add body and help soak up moisture so the cake holds together.
Raspberry jelly
Adds fruity sweetness and moisture between the cake layers.
Confectioner's sugar
Dissolves into the rum and cream to form a smooth, sweet frosting.

The step that matters

Folding in the egg whites. Egg whites hold the air beaten into them. Stirring rather than folding deflates the foam, leaving a dense cake instead of a light, risen one.
